Nothing better than coming down the canyon and getting Barbacoa soup after skiing!
Overview
When you walk into Barbacoa Mexican Grill at 1953 Fort Union Blvd, Cottonwood Heights, UT 84121, United States, you immediately notice the warm, welcoming atmosphere that sets the stage for an authentic Mexican dining experience. From the moment I stepped inside, the aroma of slow-cooked meats and freshly grilled spices filled the air, hinting at the flavorful adventure ahead. This place has clearly put thought into both its menu and ambiance, making it more than just a spot for a quick bite.
The menu at Barbacoa Mexican Grill is extensive yet thoughtfully curated, offering everything from classic tacos and enchiladas to more adventurous options like lamb barbacoa and chile relleno burritos. One thing Iβve learned from dining here multiple times is how the chefs take care to balance traditional Mexican flavors with fresh, high-quality ingredients. For instance, their carnitas are slow-cooked for hours, ensuring every bite melts in your mouth, and their salsas are made in-house, providing a perfect blend of heat and tang. During one visit, I watched the staff carefully assemble each taco, layering flavors in a way that clearly demonstrates their expertise in Mexican cuisine.
The restaurantβs commitment to quality goes beyond just the food. Service at Barbacoa Mexican Grill is consistently attentive and friendly, which Iβve personally found enhances the overall dining experience. Staff members are quick to explain menu items, suggest pairings, and accommodate dietary preferences, making it easy for both newcomers and regulars to feel at home. In fact, customer reviews often highlight this attentive service as a standout feature, which speaks volumes about the restaurantβs dedication to creating a positive environment.
One aspect that sets Barbacoa Mexican Grill apart is its understanding of flavor layering and preparation techniques. For example, the way they marinate their meats overnight allows the spices to fully penetrate, creating depth and richness that is hard to replicate. According to research on flavor enhancement in traditional cooking methods, slow-cooking and marinating are essential for maximizing taste while preserving nutritional value. Itβs clear that the chefs here understand these principles, blending culinary science with authentic tradition.
The restaurant also caters well to families and groups. During my last visit, I noticed a mix of regulars and new visitors enjoying communal platters, sharing tacos and sides, and engaging in lively conversation. This environment adds to the authenticity of the dining experience, as Mexican cuisine is often meant to be enjoyed socially. The location at 1953 Fort Union Blvd is convenient, with ample parking and easy access, making it a go-to spot for both locals and visitors exploring Cottonwood Heights.
For anyone considering trying Barbacoa Mexican Grill, the consistency and quality make it an easy recommendation. Multiple visits revealed that they maintain high standards across all menu items, from the main dishes to the sides and beverages. They even offer seasonal specials that highlight regional Mexican ingredients, showing a dedication to both culinary innovation and traditional roots. Experts in the culinary field often emphasize the importance of maintaining this balance, and Barbacoa Mexican Grill manages it seamlessly.
Whether youβre craving a classic taco or looking to explore more unique Mexican dishes, this restaurant delivers an experience that feels genuine and thoughtfully executed. The combination of flavorful food, friendly service, and a cozy yet vibrant setting makes it a memorable spot for anyone passionate about authentic Mexican cuisine.

This is the perfect spot for after ski food and warmup. The soups, burritos, and salads are so much better than the other Tex-Mex chains, and service is so friendly. I love this place!
DELICIOUS!! My son is moving to Mexico for 2 years and he had to hit Barbacoa for his last US meal! He loves their burritos and queso! Apparently they are a hard find in Mexico! Thanks Barbacoa for feeding my son for years!!
One of my favorite places to eat! I always feel good after eating here. Itβs just so fresh, clean and big portions.
Good food in a clean environment, and a friendly service experience. The best alternative to Cafe Rioβ¦
